How to do green tea rolling
The purpose of rolling is to first shape it and to break the leaf cells to increase the flavor concentration of the finished tea. In the processing of green tea, except for a few famous green tea, twisting is generally an indispensable process.
The technical points of rolling are:
1.Rolling pressure control “light, heavy, light”.
In order to prevent loose tea bars and crushed tea from flat bars, pressurization should follow the principle of “first light, then heavy, gradually pressurized, alternate light and heavy, and finally not pressurized”. Generally, the time ratio between pressurization and release is 2: 1 or 3: 1, such as pressurization for 10 minutes and release for 5 minutes, or pressurization for 15 minutes and release for 5 minutes. 2.The rolling time and the amount of leaves should be appropriate. Twisting time of the young leaves can be relatively short, and the old leaves should be longer; the amount of leaf throwing is closely related to the volume of the kneading drum. Due to the large volume of young leaves, the volume of the old leaves is small.
